Fennel Seed

Powerful and distinctive, ribbed fennel seeds give classic sweet Italian sausages their tang. The product of the spiky, edible fennel bulb has been referenced as far back as the time of Hippocrates as a spice, digestive aid, and, sometimes, ingredient in ancient rituals. Now, it’s often used in pork preparations like porchetta, or as an addition to pickles and seeded bread.
